Cowboy Pintos (Crockpot Style)

I fix beans at least once a week.  According to my husband he can eat the whole pot....funny that I always wind up throwing some out at the end of the week... Anyway, I have a Marlboro Cookbook with lots of western style meals and this one for pinto beans looked really good... so I adapted it for the crockpot.


1 lb package pinto beans, picked thru for stones
8 cups water
1 small sweet onion, chopped
1 to 2 tablespoons bacon grease
1 jalapeno, seeded and minced
1 small piece of fat meat
1/8 teaspoon cumin
salt
pepper


Place sorted beans and water in crockpot.  In a small pan, saute onion in bacon grease till tender.  Pour into the crockpot.  Add jalapeno, fat meat.  Season with cumin, salt and pepper.  Cook on high for 5 to 6 hours.

Ropa Veija

Saturday tends to be a busy day around our house. The grandkids and my parents usually come visit. Dinner is often times not thought about till late in the day when I'm tired but NOT last weekend. I was on top of things. I managed to fix Chicken Tettrazini for lunch for the masses at my house and I also filled the crockpot with some dinner fix'ns for Billy Head and I. Of course when I said it was a new recipe, Billy Head automatically turned up his nose. SNOB! But to his antics.... I say HA! It turned out to be really good. Give it a try.

Ropa Veija
  • 3 pounds chuck roast- ( I used a package of stew meat)
  • 1 small or 1/2 large onion, chopped (red or yellow onion)
  • 1 cup chopped celery (or more)
  • 2 medium green peppers, chopped
  • 2 medium red peppers, chopped ( I didn't have any of these so I didn't put them in)
  • 1 package sliced mushrooms (this was my addition, recipe didn't call for it.)
  • 1 can chopped tomatoes (15 oz)
  • 1 small can tomato paste (6 oz)
  • 2 bay leaves ( I only used 1)
  • 2 Tbsp chili powder ( I only used 1 Tbsp)
  • 1 tsp oregano
  • 3 boullion cubes ( I only used 1)
  • salt and pepper

Preparation:

1) Salt and pepper the meat, and brown it (** I skipped this step)

2) Layer onion and celery on bottom of crock pot (slow cooker).

3) Put meat on top.

4) Drain the tomatoes and save juice. Layer tomatoes, peppers and mushrooms over the meat, along with the bay leaves.

5) Mix the rest of the ingredients together (including the reserved tomato liquid) and pour over the rest of the food. ( ** I thought the the mixture looked rather thick so I added about 1/2 cup water. )

Cook 2 to 3 hours on high, or 5 to 7 hours on low.

I served it over penne pasta or it would be good over rice or shred the meat and fill a tortilla with the mixture.

Beef Stew

This is great for those cold winter evenings served with some crusty bread for dunking. Makes a good lunch the next day too.


2 lbs. stew beef
1 small onion, chopped
4 medium red potatoes, diced
4 carrots, sliced
1 envelope onion soup mix
1 can diced tomatoes
1 can beef broth
1/3 cup red wine
2 bay leaves
1 teaspoon thyme
salt and pepper

Place first 4 ingredients in crock pot. Sprinkle with onion soup mix. Add tomatoes, beef broth, red wine, bay leaves and spices. Cook on low for 10-12 hours or high for 6-8 hours.

Chicken and Stuffing Casserole

I love coming home from work and dinner has been prepared for me and waiting to be served. Ahhhhh I love living the privileged life with my butlers and maids and chauffeurs and... and.... and... CROCKPOTS!!!!! This is as close to having dinner prepared for me as I will ever get. Enjoy!



1 box Chicken Flavor Stove Top
2 cups cooked chicken, cubed
2 cans cream of chicken soup
1/2 cup milk
2 cups cheddar cheese, shredded

Prepare stuffing mix according to directions and place in 5 qt. crock pot. Stir in 1 can cream of chicken soup. In a mixing bowl, stir together cubed chicken, 1 can cream of chicken soup and milk. Spread over stuffing in crock pot. Sprinkle cheese over top. Cover and cook on low for 4 to 6 hours.

Crockpot Pork Roast

This was the very first meal I ever fixed for Billy Head. It was a keeper and I guess he is too.

1 2 lb. pork tenderloin
3 cloves garlic
1 small onion, sliced in rings
4-5 med. Potatoes
4 carrots, cut in chunks
1 can green beans, drained
1 small jar horseradish
1/2 cup water
salt & pepper

Spray crockpot with Pam, Place onion, potatoes and carrots in bottom of pot. Place roast on top of veggies. Make 3 slits in top of roast and insert a garlic clove in each. Pour green beans around roast. Spread horseradish on top of meat. Pour water gently on meat and veggies. Sprinkle with salt and pepper. Cook on low for 8-10 hours.
