Beef Stew

This is great for those cold winter evenings served with some crusty bread for dunking. Makes a good lunch the next day too.


2 lbs. stew beef
1 small onion, chopped
4 medium red potatoes, diced
4 carrots, sliced
1 envelope onion soup mix
1 can diced tomatoes
1 can beef broth
1/3 cup red wine
2 bay leaves
1 teaspoon thyme
salt and pepper

Place first 4 ingredients in crock pot. Sprinkle with onion soup mix. Add tomatoes, beef broth, red wine, bay leaves and spices. Cook on low for 10-12 hours or high for 6-8 hours.
