Chicken with Champagne Sauce

I had almost forgotten about this recipe cause I haven't made it in years and I have no idea where this came from. It is a good dish to make for company or for date night with your Billy Head.




2 tablespoons butter
4 chicken breasts, halved
1/2 cup sliced mushrooms
1/3 cup champagne
1/3 cup sour cream
1/8 teaspoon salt
1/8 teaspoon white pepper

Heat butter in skillet, brown chicken on both sides. Remove chicken to baking dish. Reserve drippings in skillet, add mushrooms and sauté. Remove mushrooms and set aside. Stir champagne into drippings, simmer until heated. Stir. Pour over chicken, cover and bake at 350 degrees for 20 min. Remove chicken to platter, reserve liquid. Add sour cream, salt and pepper to liquid. Whisk till smooth. Pour over chicken and top with mushrooms.
