Springtime Quiche

I love quiche and I don't know why I don't make it more often than I do. This is a really easy one and tasty too. And FYI, real men do eat quiche. And if you have a billy man that thinks he is too macho to eat quiche, you can always change the name to broccoli and bacon pie or springtime delight. Be creative, they'll never know the difference and what they don't know certainly won't hurt them.


1 deep dish pie shell
1 (10 oz.) pkg. frozen broccoli, cooked and drained
8 slices bacon, cooked and crumbled
2 cups shredded cheese (swiss or cheddar)
4 eggs
1 1/2 cups half n half
1/8 teaspoon salt
1/8 teaspoon ground nutmeg

Bake pie shell at 400 degrees for 3 minutes. Remove and gently prick with a fork. Bake 5 minutes longer. Let cool on rack. After cooling, sprinkle broccoli, bacon and cheese in shell. Beat eggs, add half n half, salt, nutmeg and pepper. Beat well. Pour into pastry shell. Bake at 350 degrees for 55 to 60 minutes. Let stand 10 minutes before serving.
